This Peach, Thyme, and Orange Ghee Cake is summer in every bite! Juicy peaches, fragrant thyme, and zesty orange come together in a tender, golden cake made with OMGhee for extra richness. Perfect for any occasion, it’s a dessert that’s as stunning as it is delicious.
Ingredients
For the Peaches

3 medium peaches, halved & stoned
- 2 tbsp brown sugar
Cake Base

100ml OMGhee
- 70g caster sugar
- 70g honey
- 3 medium eggs + 2 yolks
- 200g ground almonds
- 100g plain flour
- 1/2 tsp baking powder
- 1/3 tsp bicarbonate of soda
- 1/2 tsp sea salt
- Zest 3 oranges
- 100g Greek yogurt
- 1 tsp vanilla extract
Organge Syrup

150ml fresh orange juice
- 35g caster sugar
- 2.5 tsp thyme leaves
- 2 tbsp OMGhee
Directions
For the Peaches
Preheat oven to 190°C. Line a 9-inch baking tin with baking paper and arrange peach halves cut-side up. Sprinkle with brown sugar and bake for 20 minutes.
- Switch to the grill setting at 220°C and place the tray on the top shelf for 4–5 minutes, or until golden brown and slightly charred.
- While the peaches cook, prepare the cake base.
For the Cake
In a bowl, whisk together the yoghurt, vanilla, and orange zest. In a separate bowl, combine the ground almonds, flour, baking powder, bicarb, and salt.
- Gradually fold the wet ingredients into the dry mixture until just combined.
- When the peaches are ready, remove them from the tray.
- Pour the cake batter into the same baking tin and gently arrange the peaches on top. Reduce the oven heat to 170°C fan and bake on the middle shelf for 40 minutes, or until a skewer inserted into the centre comes out fairly clean.
- While the cake bakes, prepare the syrup.
Prepare the Syrup
In a bowl, mix the sugar with orange juice.
- Heat a frying pan over medium-high heat, add 2 tablespoons of OMGhee, and fry the thyme for 2–3 minutes until lightly crisp.
- Stir the thyme into the orange-sugar mixture.
- Pour the syrup over the hot cake as soon as it’s out of the oven and let it soak in.
To Serve
- Serve warm or at room temperature with crème fraîche or yoghurt.
