OMGheeShare
There’s something truly special about French toast—soft on the inside, crispy on the outside, and full of comforting flavors. But this Caramelised Spiced French Toast with Berry Compote takes things up a notch, using OMGhee to achieve a golden, caramelised crust while infusing every bite with rich, warming spices. Topped with a tangy berry compote and a dollop of mascarpone, this is the ultimate breakfast indulgence.
The Secret to Perfectly Caramelised French Toast
The magic happens in the pan. Sprinkling brown sugar into the OMGhee before adding the bread creates a beautifully caramelised coating, giving each slice a delicate crunch. Ghee’s high smoke point means it won’t burn as quickly as butter, ensuring a rich, even golden color without bitterness. The result? French toast with an irresistible crispy finish and a buttery, nutty depth of flavor.
A Spiced Twist on a Classic
While classic French toast is delicious, a little spice makes it even better. A mix of cinnamon, mixed spice, and vanilla bean paste gives the custard a warm, aromatic touch, enhancing the rich flavors of the dish. Paired with the tart, juicy berry compote, each bite is perfectly balanced between sweet, tangy, and spiced.
How to Serve It
For the ultimate experience, serve your caramelised French toast fresh off the pan, topped with:
✔ A generous spoonful of berry compote for a burst of fruity goodness
✔ A dollop of mascarpone, cream, or yoghurt for creamy contrast
✔ A dusting of icing sugar for a touch of sweetness
✔ Freshly grated orange zest to brighten every bite

Indulge in the ultimate breakfast treat with Caramelised Spiced French Toast with Berry Compote. Thick slices of sourdough are soaked in a fragrant spiced custard, pan-fried in golden OMGhee, and caramelised to perfection. Topped with a luscious berry compote and a dollop of mascarpone, this dish is a perfect balance of crispy, creamy, and fruity flavors—pure morning bliss!

Ingredients
-
2 eggs
- 150ml whole milk
- ½ tsp mixed spice
- Pinch ground cinnamon
- 1 tsp vanilla bean paste
- 4 thick slices white sourdough
- 1 tbsp OMGhee for frying
- 4 tbsp mascarpone, cream or yoghurt
- Icing sugar to serve
- Grated zest of ½ orange
For the Berry Compote
-
250g frozen mixed berries
- Juice ½ orange
- 2 tbsp caster sugar
Directions
In a small pan, combine the berries (fresh or frozen) with a splash of water and cook over low heat, gently stirring until the berries soften and the sauce thickens slightly, about 5min. Set aside.
- In a wide, shallow bowl, whisk together the eggs, milk, mixed spice and cinnamon until fully combined.
- Heat a little OMGhee in a frying pan over medium heat. Once the OMGhee is melted and foaming, sprinkle some brown sugar into the pan (this will caramelise the bread), dip each slice of sourdough into the egg mixture, coating both sides evenly.
- Add the coated sourdough slices to the pan and fry for 2-3 minutes on each side, or until golden and crispy.
- Repeat with the remaining slices, setting the cooked ones aside on a plate.
- Place the warm fried sourdough on plates, then top with a dollop of mascarpone, a generous spoonful of berry compote, and a sprinkle of grated orange zest.
- Dust with icing sugar and enjoy.
