The Five-Minute Sauce That Changes Everything
OMGheeShare
This spiced ghee yoghurt is one of those simple extras that quietly transforms a meal. It takes five minutes, uses pantry spices, and instantly adds warmth, richness and balance to whatever you serve it with. The contrast between hot, spiced OMGhee and cool, creamy yoghurt is what makes it so good.
Heating the ghee until shimmering before adding the spices allows them to bloom and release their full flavour. Cumin, curry powder and smoked paprika become fragrant and aromatic, while the ghee carries that flavour beautifully. When poured over yoghurt, the hot spiced ghee creates ripples of colour and warmth that are as good to look at as they are to eat.
While it is perfect spooned over rice, this is a very versatile condiment. Use it with lamb or chicken, drizzle it over roasted vegetables, serve it alongside barbecued prawns, or add it to a mezze-style spread as a cooling counterpoint. It also works brilliantly in grain bowls and as a finishing touch to simple weeknight meals.
This is the kind of recipe you make once, then start adding to everything.
