There are burgers, and then there are burgers that require both hands, several napkins and absolutely no attempt at looking elegant while you eat them.
This is the second kind. 😂
And if you’re making a proper burger at home, this is not the time to be timid with the pan.
You want heat. You want that gorgeous golden crust on the beef. You want onions cooked until they’re sweet and sticky, and you definitely want to toast those brioche buns in the pan afterwards, because leaving all that flavour behind would be a terrible waste.
This is exactly the sort of cooking where ghee earns its place beside the stove. It handles the heat beautifully, then hangs around for the onions and the buns.
One pan. One jar. A seriously good burger.
Fair warning, you may ruin takeaway burgers for yourself.
