Sticky Pineapple & Jalapeño Chicken Wings

Spring is here. The BBQ is coming out, the days are getting longer and friends are starting to drop around again.

Which means it’s also the season for food you can put in the middle of the table and let everyone help themselves to.

These Sticky Pineapple & Jalapeño Chicken Wings are exactly that. Golden, sticky, sweet, salty, with a bit of heat from the jalapeños and fresh lime to cut through it all.

OMGhee is right at home here too. Its naturally high smoke point makes it brilliant for high-heat cooking, while that rich, buttery flavour works beautifully with the pineapple, honey and chilli.

Cook them in the oven or throw them on the BBQ, pile them onto a platter with lime wedges and coriander, and put out plenty of napkins.

Because nobody eats a sticky chicken wing politely. 😂

Sweet pineapple, jalapeño, honey and lime make these golden chicken wings sticky, buttery and very hard to stop at one. Easy to cook in the oven or on the BBQ, they’re made for spring entertaining, weekend gatherings and feeding a hungry crowd.

Ingredients

  • 1.5 kg chicken wings
  • 3 tbsp ghee, melted
  • 1 cup fresh (or tinned) pineapple
  • 2 jalapeños, finely sliced
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp lime juice
  • Salt and freshly ground black pepper, to taste
  • Fresh coriander, to garnish
  • Lime wedges, to serve

Directions

  1. Place chicken wings onto a baking tray and scatter slices of pineapple and jalapeños around the wings.
  2. Combine the soy sauce, honey, lime juice, melted ghee, salt, and pepper to create the marinade.
  3. Coat the chicken wings thoroughly in the pineapple ghee marinade and allow to marinate for at least 1 hour, or overnight for maximum flavour.
  4. Preheat oven to 200°C or prepare a grill.
  5. Arrange the wings on a lined baking tray and cook for 35–45 minutes, turning halfway through, until golden, sticky, and cooked through.
  6. Brush with additional melted ghee and pineapple glaze during the final stages of cooking to create a glossy finish.
  7. Garnish with fresh coriander and serve with lime wedges.
