I made red curry the other night and, as usual, cooked far too much rice.

Not because I'm incompetent at measuring rice.

I do it deliberately. 😂

Leftover rice is basically lazy meal prep. You've already done half the work, and tomorrow night's dinner can be whatever is lurking in the fridge, thrown into a hot pan with some OMGhee.

I actually had the perfect plan for mine.

Fried rice.

Cold jasmine rice, eggs, garlic, ginger, veggies, soy, chilli crisp and plenty of heat. Exactly the sort of easy weeknight dinner I love.

So naturally...

I made rice pudding instead. 😂

And while I regret absolutely nothing about the rice pudding, it did remind me that we hadn't put our Simple Fried Rice recipe on the website yet.

So here it is.

It's quick, flexible, brilliant for using up leftovers and a perfect example of why I call OMGhee a kitchen all-rounder.

No special “ghee food” required.

Just the food you already cook, made delicious.

Cold leftover rice was made for this.

Get your wok or frying pan nice and hot, add OMGhee, eggs, garlic, ginger and whatever veggies you have on hand, then let the rice toast a little around the edges.

We've given you measurements below, but this is fried rice. Use what you've got, taste as you go and measure the OMGhee with your heart. 😂

Quick, crispy, savoury and on the table in about 20 minutes.

Simple Fried Rice

Ingredients

  • 4 cups cooked jasmine rice

  • 3 tbsp ghee

  • 3 eggs, lightly beaten

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 cup carrots, finely diced

  • 1 cup peas

  • 1 cup corn kernels

  • 3 spring onions, sliced

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce (optional)

  • 1 tsp sesame oil

  • Salt and freshly ground black pepper, to taste

  • Fresh coriander or spring onion, to garnish

  • Chilli crisp to garnish

Directions

  1. Heat a large wok or frying pan over medium-high heat and add ghee.

  2. Add the beaten eggs and pan fry until just cooked, allowing the ghee to coat and enrich the eggs before removing them from the pan and cut into chunks.

  3. Add more ghee and sauté the garlic, ginger, carrots, peas, and corn until softened and fragrant.

  4. Add the rice and stir-fry over high heat, allowing the grains to become lightly toasted.

  5. Return the cooked egg to the pan and add soy sauce, oyster sauce, sesame oil, salt, and pepper.

  6. Toss everything together until evenly combined and heated through.

  7. Finish with sliced spring onions, fresh coriander, and a final spoonful of melted ghee and chilli crisp stirred through before serving.
