Sweet, caramelised Honey Roasted Ghee Carrots meet creamy, herby Greek yoghurt in this vibrant side dish. Roasted to perfection in OMGhee and honey, these tender carrots pair beautifully with zesty yoghurt and crunchy toasted walnuts. A simple yet elegant addition to any meal, perfect for sharing!

Ingredients

3 tbsp OMGhee
- 8 Dutch carrots (washed, stalks trimmed to 1cm)
- 3 tbsp honey
- 350g Greek yoghurt
- 1/2 cup walnuts, toasted
- 1/2 cup freshly chopped herbs
- ½ lemon zest
Directions
Preheat the oven to 200°C and melt the ghee in a pan over low heat.
- Once melted, add the honey and stir to combine.
- Place the washed and trimmed carrots on a baking tray.
- Drizzle the ghee and honey mixture over the carrots, ensuring they are evenly coated.
- Roast the carrots in the preheated oven for 25 minutes, or until tender and slightly caramelised, turning halfway through for even roasting.
- While the carrots are roasting, prepare the Greek yoghurt mixture:
- Spoon the Greek yoghurt onto a plate or shallow dish. Add freshly chopped herbs (such as parsley, dill, or thyme), lemon zest, and season with salt and pepper to taste. Mix well to combine.
- Once the carrots are cooked, place them on top of the Greek yoghurt mixture.
- Garnish with toasted walnuts and herbs.
