Ingredients

300g mixed mushrooms, sliced (brown Swiss and shiitake work beautifully)
- 2 tbsp OMGhee
- 2 cloves garlic, finely diced
- Handful of fresh herbs, chopped (dill and parsley add great flavour)
- Fresh sourdough, pan-fried in OMGhee for a golden, crisp touch
- Whipped fetta, cottage cheese, labneh, or herbed ricotta—perfectly creamy options for spreading
- Sliced avocado
- Salt, to taste
Directions
Heat the OMGhee in a frying pan over medium heat, then add the mushrooms.
- Sauté gently for 5-10 minutes until the mushrooms begin to soften.
- Add the garlic and continue cooking until the mushrooms are golden and crispy around the edges.
- In the same pan (or a separate one), melt a little extra OMGhee and toast the sourdough until golden and crisp.
- Place the toasted sourdough on a serving plate.
- Spread your chosen creamy topping (whipped fetta, cottage cheese, labneh, or herbed ricotta) over the toasted sourdough.
- Spoon the warm, garlicky mushrooms on top.
