Ingredients

2 bananas
- 1 tsp OMGhee
- 1 tsp caster sugar or honey
- Cinnamon
Crumble
-
1 tbsp honey
- 1 tbsp OMGhee
- ½ tsp vanilla bean pasta
- ½ tsp salt
- ¼ cup pumpkin seeds
- 2 tbsp pecans
- 2 tbsp macadamia nuts
- 2 tbsp almonds
- 2 tbsp sultanas
Directions
For the Crumble
Melt the OMGhee and then combine it with honey, vanilla bean paste and a sprinkle of salt.
- Add pumpkin seeds, chopped pecans, macadamia nuts, almonds, and sultanas to the bowl.
- Mix well, then spread the crumble on a baking tray and roast at 180°C for 10-15 minutes, until golden and fragrant. Be careful not to burn the mixture here!
The bananas
Heat a cast iron skillet over medium-high heat and add 1 tsp OMGhee.
- Peel the bananas, cut them in half, then slice each half lengthwise to make 4 pieces.
- Place the banana slices, cut side down, in the hot pan and sprinkle with sugar.
- Cook for about 2 minutes without moving them, then flip and cook for another 30 seconds.
- Remove and set aside
To Serve
Place a dollop of your favourite yoghurt on a plate, top with the caramelised bananas, and sprinkle with the nut crumble.
- Serve with a drizzle of honey and some orange zest for the ultimate weekend breakfast.
