Golden, Crispy & Oozing with Herby Ghee

This is one of those recipes that feels indulgent in the best possible way. Golden and crunchy on the outside, juicy through the middle, and filled with herby, garlicky OMGhee that slowly melts as it cooks. It is comfort food with a little confidence.

Stuffing chicken with ghee is a bit of a secret weapon. It keeps the meat beautifully moist while infusing flavour from the inside out. Because ghee has such a high smoke point, you still get a deep golden crumb without anything burning or turning greasy. The double-crumbing here is intentional and gives you that extra crunch that makes every bite deeply satisfying.

As it bakes, some of the herby ghee will naturally escape and bubble away on the tray. Don’t panic, that is flavour gold. Spoon it over the chicken when serving and let it act as a built-in sauce.
