What to look for in a good organic ghee

Start with the label.

If organic matters to you, look for certified organic, rather than simply the word “organic” somewhere on the packaging.

OMGhee is made from Australian certified organic, grass-fed butter, and OMGhee itself is certified organic.

Then look at where the ghee actually comes from.

We think provenance matters. We wanted to make a ghee where we knew the butter, knew where it came from and could stand behind the way the finished product was made.

That's why OMGhee starts with Australian butter from Australian dairy cows.

Why buy OMGhee

We don't take butter, remove the water mechanically and call it ghee.

We cook it.

OMGhee starts with creamy Australian certified organic, grass-fed butter which we slowly simmer for around seven hours.

As it cooks, the water evaporates and the milk solids separate and gently caramelise. We then meticulously filter those solids away.

That slow cooking is where OMGhee develops its rich, warm, slightly nutty, almost caramelised flavour.

It's also why I'm so particular about the distinction between proper cooked ghee and some of the butter oils you'll find sold under the same name.

OMGhee is independently tested as lactose and casein free, and because the milk solids have been removed, it can handle high-heat cooking beautifully.

What you can actually do with it

This is the bit I love.

You don't need to learn a whole new way of cooking because you've bought a jar of ghee.

Use it in the food you already make.

  • Fry in it — eggs, steak, fish, chicken, anything that needs a good hot pan.
  • Roast in it — especially potatoes. Crispy ghee potatoes are ridiculously good.
  • Sauté in it — vegetables, mushrooms, greens and garlic.
  • Bake with it — use it anywhere that rich, buttery flavour makes sense.
  • Spread it — yes, you absolutely can put ghee on toast.

That's why I call it a kitchen all-rounder.

It's not another special ingredient that gets shoved to the back of the pantry after one recipe. It's something you can reach for every day.

How to store your ghee

Ghee is beautifully low maintenance.

It doesn't need refrigeration. Keep the lid on, store it somewhere cool and dry away from direct sunlight, and use a clean, dry spoon.

Temperature will change its texture.

In a warm Sydney kitchen it might become very soft or even liquid. In cooler weather it will firm up.

You might even see different textures within the same jar as temperatures change.

That's normal. It's real fat doing what real fat does.

How much ghee should you buy?

If you've never tried OMGhee before, our 300ml jar is a good place to start.

But if ghee becomes the jar you're reaching for to fry your eggs, roast your vegetables, cook your steak and bake with, the larger sizes and multi-packs make more sense.

You don't need much, either.

I often use around half a teaspoon to cook two eggs. A jar can go surprisingly far once you realise you don't need to drown your food in it.

A fat with a very long history

Ghee might feel relatively new to many Australian kitchens, but the ingredient itself certainly isn't.

Ghee has been used for thousands of years in Indian cooking and Ayurveda.

That's one of the things I love about it.

Is ghee lactose-free?

OMGhee is independently tested as lactose and casein free.

During the ghee-making process, the milk solids are removed, including the lactose and casein.

Ghee is still made from butter, though, and lactose intolerance and a milk allergy are not the same thing. If you have a diagnosed dairy allergy, please check with your healthcare professional.

Does ghee need to be kept in the fridge?

No.

Keep it somewhere cool and dry, away from direct sunlight, with the lid on. Always use a clean, dry spoon.

Yes.
