 Salmon with Turmeric Lentil and Dill Yogurt

Lentils:
1 cup of red lentils
1 cup of water
Tbsp turmeric
Tbsp cayenne
Tbsp garlic powder
Tsp ginger powder
Salt to taste
Pinch of cinnamon

Cook lentils in salted water, strain and cool when cooked but still slightly firm in texture
When ready to serve, heat ghee with spice mixture and toss lentils in until aromatic.

Yogurt Sauce:
1 cup Greek yogurt
1/2 juice of a lemon
1/2 cup chopped mint
1/2 cup chopped dill
Salt to taste
1/4 cup Olive oil (we love Kasandrinos EVOO)
Water for consistency

Blend until smooth and incorporated.
Adjust seasoning.
