It’s quick enough for a weekday breakfast but fancy enough for a weekend brunch, especially piled high on crusty sourdough and topped with a generous sprinkle of Parmesan. Whether you’re fuelling up for a busy day or lingering over a coffee, this scramble will keep you satisfied and smiling.

Need breakfast in a flash? This Spicy Scramble is your Speedy Gonzales of the morning — on the table in 10 minutes flat, with creamy eggs, fresh herbs, a little chilli kick, and the rich flavour of OMGhee. Fast, fresh, and full of flavour.

Speedy Spicy Scramble

Ingredients

  • 4 large eggs

  • 1 tbsp OMGhee
  • ½ small red chilli, finely sliced (or to taste)
  • 100g cherry tomatoes
  • 1 shallot finely sliced
  • Handful of Thai basil torn
  • Handful of coriander
  • 1 tsp soy sauce
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • Grated Parmesan to serve 
  • 2 slices sourdough, toasted

Directions

  1. In a bowl, whisk together eggs, soy sauce and pepper.

  2. Heat OMGhee in a non-stick frying pan over medium heat. Add shallots and saute until crispy and golden then and cherry tomatoes and sauté for 1 minute.
  3. Pour in the egg mixture with the chilli and herbs. Gently stir with a spatula, pushing eggs from the edges to the centre.
  4. Cook until softly set and creamy (about 2–3 minutes).
  5. Serve immediately over sourdough toast with some grated parmesan on top
