Need breakfast in a flash? This Spicy Scramble is your Speedy Gonzales of the morning — on the table in 10 minutes flat, with creamy eggs, fresh herbs, a little chilli kick, and the rich flavour of OMGhee. Fast, fresh, and full of flavour.

Ingredients

4 large eggs
- 1 tbsp OMGhee
- ½ small red chilli, finely sliced (or to taste)
- 100g cherry tomatoes
- 1 shallot finely sliced
- Handful of Thai basil torn
- Handful of coriander
- 1 tsp soy sauce
- ½ tsp sea salt
- ¼ tsp black pepper
- Grated Parmesan to serve
- 2 slices sourdough, toasted
Directions
In a bowl, whisk together eggs, soy sauce and pepper.
- Heat OMGhee in a non-stick frying pan over medium heat. Add shallots and saute until crispy and golden then and cherry tomatoes and sauté for 1 minute.
- Pour in the egg mixture with the chilli and herbs. Gently stir with a spatula, pushing eggs from the edges to the centre.
- Cook until softly set and creamy (about 2–3 minutes).
- Serve immediately over sourdough toast with some grated parmesan on top
