1 lb boneless and skinless chicken breast cut into bit size cubes
1 lb boneless and skinless chicken thigh cut into bit size cubes
1/2 to 3/4 cup arrowroot flour
1 cup #omghee
2tbs fine sea salt
2 quarts water
1tsp coarse sea salt
1 tsp dried parsley
1/2 tsp paprika
6-8 cracks fresh black pepper
1. Create a salt brine by adding the fine sea salt to the water and let the chicken soak in the fridge for 30min.
2. Drain the chicken and pat dry with paper towels
3. Coat the chicken pieces in a thin layer of arrowroot flour
4. Heat a large skillet on medium high and add 1/2 cup of omghee
5. Cook the chicken for 2-4min on each side until golden brown, fry in batches to avoid crowding
6. Season with coarse sea salt, black pepper, paprika and dried parsley
7. Enjoy immediately while hot!
