Using a very sharp knife I thinly sliced one large ripe plantain (you can use a mandoline, I like using a knife so the slices are a bit more rustic). Filled a deep skillet 1/3 of the way with melted #omghee And Coconut oil (heated to 350 Degrees F) and fried the plantains in batches for about 2-3 minutes (stirring/turning frequently to prevent them for sticking together/burning). Then immediately after you take them out of the oil, transfer them to a paper towel lined sheet pan and sprinkle with @flavorgod Pink Peppercorn Salt??.
