Egg Bhurji

I love egg bhurji. Think of it as spicy scrambled eggs. This is a dish I would enjoy often on my many visits to India. It is great as part of your breakfast or as a filling for a breakfast burrito. I will warn you guys though, it’s spicy! Be sure to adjust the spices to your own personal tastes. Remember you can always add more spices while you taste it. Give it a try!



  • 4 eggs
  • 2 tablespoons Omghee
  • 1/2 cup red onions
  • drizzle of olive oil
  • 1/4 cup of tomatoes
  • 1 tablespoon garlic paste 
  • 1 tablespoon green chili paste
  • 1 tablespoon garam masala
  • 1 tablespoon red chili powder
  • Salt to taste
  • 1 tablespoon coriander powder
  •  tea spoon turmeric
  • handful of chopped green garlic and coriander leaves

  1. Heat pan on medium to medium high heat.
  2. Add 2 tablespoons of OMghee and let it heat in the pan.
  3. Add 1/2 cup red onions and a drizzle of Olive Oil
  4. Let the onions for roughly 5 minutes and then add 1/4 cup of tomatoes
  5. Based on the measurements above add garlic paste and green chili paste, garam masala, red chilli powder, coriander powder, turmeric, and salt.
  6. Crack open the 4 eggs and drop into the pan
  7. Stir until mixed well. Keep cooking over medium heat until eggs are cooked. We stirred until it has a non binding consistency.
  8. Add a small handful of chopped green garlic and stir.
  9. Give it a taste test and add anything you may need. Plate, garnish with coriander leaves,  and enjoy.
