Beer Cooked Mussels

Beer Cooked Mussels:

1 bottle of light beer
1 pound of scrubbed mussels
1/2 a red onion thinly sliced
1 bulb of fennel thinly sliced (save the fronds for garnish)
2 tbsp of OMghee
2 tbsp of FlavorGod Jerk seasoning (or any seasoning you wish)
Salt to taste
Juice of half a lemon

1.Heat large pot with OMghee and sweat onions and fennel until aromatic

2.Add mussels and coat in OMghee


4.Add full beer, bring to boil, and simmer covered until mussels open.

5.Add lemon juice

6.Taste broth, and adjust seasoning

7.Garnish with fennel fronds and serve immediately
